Healthy “Fro-Yo” Bites

Everyone loves a good cheesecake!  I mean what’s not to love… rich creamy cheesecake nestled on a cookie crumb base with your favorite fruit toppings. However, the calories in these delicious cheesecake bites are not good for my backside. The rich and creamy-ness of these heavenly bites can be duplicated in an easy, no bake recipe. I am sharing this recipe with you today!

No hours of baking and half the calories! WIN!

Ingredients:

1 cup graham cracker crumbs

I large container Greek Yogurt

1 tbsp strawberry jam

2 tbsp honey

Chopped/diced strawberries or raspberries

Olive oil (not pictured)

Step 1

Place muffin liners in a muffin tin pan.

Mix the graham cracker crumbs with 3 tablespoons of olive oil to make a thicker consistency. This will help with falling crumbs.

Spoon this crumble into the bottom of each cup.

Step 2

Mix together the yogurt, strawberry jam and honey in a bowl.

Step 3

Spoon this mixture on top of your crust and your dessert is almost done!

Step 4

 Sprinkle some diced strawberries on top for added color and flavor.

You can use either fresh fruit (strawberries, blueberries, cherries) or chocolate sauce and caramel are good options.  My personal favorites are strawberries.

Step 5

Then cover with plastic wrap and freeze. It’s that easy!

After 3-6 hours, your cheesecake cups are ready to serve! Peel the parchment from each cup, then enjoy!

Cut the Carbs – Eggplant/Zucchini Lasagna

Looking for a relatively healthy alternative to traditional lasagna? I am sharing a new recipe I made last week and my husband has already requested this again!

I am sure you have all seen them; the zucchini lasagnas around Pinterest with no pasta noodles in them. They always look so delicious and inviting and lasagna is one of my favorite meals of all-time… So why did it take me so long to create one of my own?! I shared another Zucchini-Zoodle inspired recipe here.

I really love this eggplant and zucchini lasagna as the concept is so genius! No pasta noodles, only vegetables! I assume you could make this lasagna vegan as well, but I do love cheese a little too much…

These are the ingredients you will need for your healthy lasagna:

1 large eggplant

2 large zucchini’s

1 pound ground turkey

1 jar marinara sauce (homemade is an option)

1 bag shredded cheese

Olive Oil

(garlic salt)

Preheat oven to 375*

Slice your zucchini and eggplant about ⅛th inch thick. Lay on top of wire racks or strainers and sprinkle each side with salt. Allow the eggplant and zucchini to sit for at least 30 minutes or until much of the water has sweat out. Pat dry with paper towel.

While the veggies are sitting, brown your turkey. I use olive oil and dash garlic salt when stirring.

Mix in about 1/4 of the marinara sauce in with the ground turkey. Add a little salt and set aside.

Before the veggies are ready to be put in the pan, you need to pat dry. *This is the most important step so there is not access water in the dish. I used a paper towel and pressed both sides of each slice on the paper towel.

*If you have the excess moisture issue, just drain out the liquid the best you can. Others have mentioned pre-roasting your veggies helps reduce liquid.

In a 9×13 baking dish, assemble your lasagna. Put a ladle full of sauce on the bottom of the pan and smooth out. Place a layer of eggplant, followed by a layer of zucchini. Top with half the sauce and then sprinkle cheese. Add in the ground turkey and smooth. Add another row of eggplant, then zucchini, and then the rest of the sauce. Add ground turkey and sprinkle cheese. Top with the last of the eggplant and zucchini and smother in cheddar and mozzarella cheese!

Bake, uncovered, 30 minutes. You may need more time depending on how thick you cut the veggies. Allow to cool for 10-15 minutes and then serve.

Capture

Sprinkle the garlic salt and add any extra cheese to the top while it cools.

Monday… COFFEE on repeat!!!

It is a busy week at work with meetings and new employees so I hope I can get this weeks posts to y’all if I don’t lose my mind first 🙂 If you have been keeping up with my life the last couple of weeks, I have been on a sugar detox. I am really trying to make better food choices and do a summer body reset. It has not been easy but I am still alive so I guess it is possible to go without sugar. I wanted to share some of my favorite recipes that I found on Pinterest. I have never really been a cook or like cooking so I have survived via the Crockpot. Trust me, it is still being used but I have discovered so many amazing (sugar-free) recipes that I prepared and cooked all on my own. Here are a few that I have recently discovered. Egg White & Veggie Muffins

This is my first food post review and I am excited to share with you a new obsession. If you don’t follow Katie over at Red Velvet Snow I highly suggest you should… she posts the most amazing recipes!! There was one in particular that I was totally intrigued by…. Egg White Breakfast Muffins!!! I am all about easy and fast when it comes to food… when your hungry you want to eat NOW! I also love trying new things for breakfast. I made these over the weekend and they were delicious. It took 4 ingredients, 10 minutes to prep and 20 minutes to cook! My son even wanted to try and he was pretty impressed – that’s a win coming from a picky toddler! 🙂

Now I have breakfast for the whole weekend…. if my husband doesn’t eat them all first 🙂

Egg White & Veggie Breakfast Muffins

Egg White & Veggie Breakfast Muffins

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

 Ingredients
  • 3 tbsp veggies of choice
  • 3 tbsp egg whites
  • 1/2 tbsp shredded cheese, optional

Directions

  • Preheat your oven to 350 and grease your muffin tins
  • In each muffin tin, put in your 3 tbsp veggies, 3 tbsp egg whites and top with your 1/2 tbsp shredded cheese
  • Repeat these steps for as many muffins as you wish to make
  • Put your muffin tin in the oven for 20 minutes, or until a toothpick comes out clean.

 

Fit for Success: Grab & Go: Egg White Bites Add liquid eggs from grocer, 350 degrees, 10 min. for mini tin, 20 min for large muffin tins.:

I added red peppers and onions for more flavor… you can add any veggies that you prefer! I poured the egg whites over the veggies and put in the oven.

Egg Muffins - Olive Oil Spray (Pure Olive Oil) 4 scallions (or green onions), minced 2 carrots, shredded 1/2 red bell pepper, minced 14 egg whites 4 whole eggs 1/2 tsp basil 1 slice partly skimmed mozzarella cheese, or 1/4 cup shredded Dash of sea salt and pepper:

I keep thinking of them as “breakfast bagel bites”…. I mean who doesn’t like Bagel Bites!!!!! 🙂

You should totally give these muffins a try…. easy, simple and yummy!!!

363 more days til Christmas….

Well it has come and gone and Christmas is officially over… Slightly depressed about it but good news is there are only 363 more days til next Christmas lol 🙂 The Monday after Christmas I am back at work ready to knock out some end of the year projects. I was going to work from home this week but being home with a 4 year old boy wanting to play superheroes was exhausting! At one point last week, I was writing emails with his Iron Man mask on just so he would be happy 🙂 Being Iron Man, office manager and supporting 4 executives was anything but easy so I was ready to come into the office today!

I actually got all of my Christmas shopping done Wednesday which left all of the cleaning and baking for Christmas Eve! My family comes to our house for Christmas Eve and we have a big dinner and open gifts. I was in charge of desserts since I still had to clean my house. It was easier for me to whip up some sweets while getting a whole house ready for 15 people!!! I made the classic pretzel kisses with M&M’s on top and some brownies (not pictured)…

The calm before the storm… Soaking up the quiet and sipping some wine before everyone arrived.

Outfit of choice this year was a Santa sweatshirt that my husband actually ordered for his company party. It was delivered late so I decided to put it to good use… Comfy leggings from Old Navy (sold out) and socks are from TopShop.

I did not get any pictures of us opening gifts since I was helping my son open his presents. He was pretty blessed this Christmas since he got EVERY superhero costume for his “superhero corner”… I will post pics from this project very soon. We enjoyed watching everyone open their gifts and we played some fun games. Then came time for Santa to come so it was off to bed for Ridge. My mom and dad stayed with us and everyone else drove back home. I “helped” Santa with all of Ridge’s new toys and he even wanted me to “help” finish his cookies and milk 🙂

And just like that it was CHRISTMAS DAY!!!!!!

He got his bike and lots of other fun toys he asked Santa to bring him. Seeing his face light up is the reason I just love Christmas! 🙂

On Christmas Day, we go to my aunts house for lunch and to open more gifts with my mom’s stepbrothers family. Staying festive with the wardrobe, I wore the reindeer dress I was supposed to wear for our company party. It also arrived late so another excuse to sport some Christmas gear! I loved this outfit!!!
